Grown-ass Man = A man who who handles his business, both personal and professional. He has as much baggage as any other adult but doesn't invite drama into his life unnecessarily. He's got his priorities straight. He's not [perfect hut his imperfections are ones that a grown ass woman can live with.
Man-child: Usually pejorative for very adolescent-acting young adult who lives in mommy's basement. Sometimes, instead, a loving reference to a boy who is acting more maturely than his age would imply. (The latter context is the one I usually see "woman-child" used in, oddly enough.)
Man: male-identified legally adult human.
Grown-ass man: implication is usually the same as the pejorative version of man-child. Basic context of "you're a grown-ass man, WTF is wrong with you?"
"Man": Depends. It typically means an adult person of a particular gender. It can also mean one of said who is mature and responsible. Or it's a tool in forcing those who identify as men to really really not come anywhere close to any other gender. ("Don't cry! Be a man about it!")
"Manchild": Pejorative. Someone who is an adult person of a particular gender, and who probably should be mature and responsible, but who instead has all of the emotional development and maturity of a deranged crawfish.
"Grown-ass man": Sometimes a response to someone being a manchild. "You're a grown-ass man; go do your damned laundry already!"
Manchild: adult human male, almost always straight and cis, who refuses to leave his comfort zone. Generally was raised with limited exposure to different cultures, and a patriarchal outlook, so his comfort zone does not include foreign foods, high culture, or housework.
Man: adult human male.
Grown-ass man: a manchild, when you're yelling at him.

A manchild may look like a man, but is a child either in age or emotion. Like a large teenager or an adult male who refuses to be held responsible.
